The barrel oven (or "horno de barro" earth oven as it is known in Chile) is really quite common in Chile, especially once you get out of Santiago where restrictions are enforced against burning wood due to the high levels of smog. The barrel concept is quite simple, a fire burns underneath, the barrel has an open pace of several inches where the heat flows around the outerpart (thus the food inside is not exposed to smoke, usually a good thing, since you can burn any wood including old pallets) and then another layer of barrel upon which the insulation (usually dirt + straw mixture) helps keep the heat inside. Here's an illustration of the concept lifted from the Serious Eats site. Later I'll do my own version.

 

Once found only in the countryside, these barrel ovens are also becoming more upscale and can cost up to over USD 1000 for the better portable versions.

I really enjoy using our barrel oven (the one covered with dirt/straw insulation), especially for pizza. It has no problem reaching high temperatures and can easily bake a pizza in a minute of so. I find it less practical for bread, as you have to keep better temperature control (and at lower temperatures!), but thousands of simple country bakers uses them daily, as you'll see from the photos further down the page.

The barrel oven can also be a bit more sophisticated, as in the following examples of a stainless steel version and the one after it covered in lava rocks. Then we have a bunch of photos of the more typical versions - this will give you an idea, but the ovens are everywhere in the Chilean countryside.

A diferencia de los hornos de barro, aquí no puedes tocar el revistimiento exterior! Te quemaí!

Cooks great, just don't touch the outside as it's not insulated! It's hot. The owners of this oven also build huge stainless steel tanks for the wine, brewing, mining and chemical industries, so this is just a plaything. ________________________________________________________________________________________________________________

pucon Horno de la "empanadería" Mamacelia, Pucón. 1/2009

Empanadas, panes, pasteles, todo cocido en un tremendo horno ("fierro forjado tapado de rocas volcánicas" para los argumentativos) que se encuentra afuera, casi en el estacionamiento.  Esa pequeña capa de rocas provee suficiente aislacion para que uno puede tocarlas sin sentir el color del horno apenas un milimetros mas abajo.

This large steel oven in Pucón is used for empanadas, breads, pastries - and is covered by volcanic rock from nearby Llanquihue volcano. The oven is so big that they have it out in the parking lot. Although the volcanic rock is just a small layer above the steel oven, it provides sufficient insulation that you can touch the rocks even with the oven baking an inch or two below. The steel here is not stainless, but the constant use and heat keeps it from rusting too much in spite of all of the rain common to Southern Chile.

Hornos en los cerros en la zona de Santa Rosa, en los cerros al final del camino que va por el valle donde está la Viña Matetic. Este es un video hecho en un pobre Blackberry...

Here is a low quality video made with a dying Blackberry of both an earth oven and a barrel oven up in the coastal hills near the Matetic winery. Chickens, dogs, etc. The Matetic winery also has a nicer oven of their own in a glass case for the tourists at their restaurant.

Horno de Tarro y barro entre Lonquén e Isla de Maipo - el dueño no me quiso decir quién le hizo el horno! 2012 /

This barrel oven is located between Lonquén and Isla de Maipo. The owner of the restaurant wouldn't tell me who made him the oven, as if it were some big industrial secret... Chileans don't like to share such sensitive information, we see it in the brewing industry, where some brewers won't even tell you what hops they use!

 

A bakery or "amasandería" in El Paico, RM, Chile

Common portable barrel ovens such as these sell for less than USD $200. The outside "insulation"is not great, being just a cement mix, but they work fine for empanadas and reheating. We bought one off the sidewalk in Malloco for our brewery balcony.

Finally this is our barrel oven after the 2010 earthquake - we patched it up with some mud and cement and it has been working well ever since!
