We suggest choosing the beer first, however begin the tasting by trying the cheese, followed by the chosen beer.
First take the cheese, break it, noting its aroma. Enjoy the taste of the cheese, then drink the beer.

For this tasting we looked for flavors that "harmonized" between the different beers and cheese.
The most interesting aspect of such a tasting is to look for the best combinations of beer and cheese. Some matches are perfect, the beer is almost a continuation of the cheese. In others, the flavors clash, or one may simply be too powerful for the other.

There are many varied potential matches between the different beers and cheeses. For this press tasting we looked to simplify matters, and chose only one combination per beer.

If you look to do this at home, you can follow a less rigid format, tasting each beer with each cheese if you wish. However, we do recommend that you start with the lighter cheeses and less flavorful beers, working your way up to the strong flavored beers and cheeses at the end. A strong beer can dominate a bland cheese, while a strong cheese can do the same to a less flavorful beer.

Prior to the formal tasting with the gourmet and business press, we did a "pre-tasting" to define which beers go with which cheeses, or vice versa. Tough work, but somebody´s got to do it!
